Breakfast Fix: Low Carb Breakfast Recipes

Breakfast Cookout with ONLY 5 Ingredients

I love a good cookout! Here in SA, we sommer call it a braai… ;)

And we do it often – oh yes, we’ll find any excuse to braai! It’s just so lovely to enjoy the outdoors and if the weather plays along, you can cook and have any meal outside.

{Nowadays though, our electricity provider is giving us even more reason to enjoy an outdoor cookout!}

It also kind of reminds me of childhood camping trips…

[recipe title=”Spicy Chourizo & Egg Cookout Dish” servings=”4″ difficulty=”easy”]

You will only need these 5 ingredients:

1 onion, chopped
100 g butter
2 cups of cherry tomatoes
200 g spicy Chourizo sausage, sliced {check ingredients carefully, some have sugar in them – avoid those!}
8 eggs

Prepare a large skillet on your fire / coals / barbecue / heat source.
Saute the onions in the butter until soft.
Add the chourizo and fry off some of the fat.
Add the tomatoes and let it cook until the they start to caramelise slightly.
Crack all the eggs open into a bowl {keep the yolks intact} and slowly drop each egg into the chourizo & tomato mix.
Cover and let it cook until the eggs have just set – no overcooked eggs please!

Season with salt & pepper and serve immediately.

This makes a great brunch dish and is a very social meal to make! Just make sure your guests each have a glass of bubbly while you’re doing the cooking – and don’t forget one for yourself.
