Happy Chocolate Cake Day!
And now you can have your {Low Carb} cake and eat it too..! {Happy dance}
These energizing little bombs are perfect bite-sized deliciousness – what more do you want or need?
Well, here’s what you’ll need to make them {makes 20}:
2 tbs nut butter of your choice
3 tbs coconut oil {soft}
1 tsp vanilla extract
2 tsp xylitol
2 tbs cocoa powder {unsweetened}
1 cup desiccated coconut
2 tbs almond flour
This is so super-easy, you don’t even need any electricity to make these – which is a big selling-point these days… {Just saying!}
So – just go ahead and mix everything together.
If the coconut oil you’re using is rock-solid, just melt it slightly. In the current summer’s heat, it’ll probably be liquid in any case…
Spoon teaspoon-sized dollops into a fun ice tray – I used flowers and fishes.
You will need to freeze these for about half an hour, just to set them and from there you can keep it in the fridge.
{Fine, so you do just need a teensy bit of electricity in the end – but you can still make these when the power is out.}
These are fantastic as a pre-workout fuel, as well as a great mid-afternoon filler or when you’re on the go and can’t eat.
You can just have them as a treat too…

It’s like peanut butter. You get a variety of nut butters – almond, macadamia, etc.
It’s basically nuts ground to a paste with some added plant-based oils.
