You can’t beat rich, decadent chocolate pots… Even better if these are Low Carb Chocolate Pots!

These Low Carb Chocolate Pots are similar to baked chocolate custard. It has a silky, rich, chocolate centre with a soft ‘crust’.

With cream, eggs, xylitol and dark chocolate, it’s a low carb dream dessert. A fat bomb really!
And if you’re not familiar with these – it’s a good thing! I like to have these low carb chocolate pots for breakfast sometimes…
{I know, I know – not a very nutritious start to the day, but hey, sometimes you need this…}

Low Carb Chocolate Pots

Ingredients

  • 1.5 cups cream
  • 45 ml xylitol
  • 80 grams dark chocolate 80%, coarsely chopped
  • 2 tsp strong black filter coffee
  • 4 large egg yolks
  • 2 tsp vanilla essence

Instructions

  1. Pre-heat the oven to 150C and prepare a bain-marie. {Fill a large baking tray halfway with hot water and place 6 ramekins inside. The water should reach about halfway up the sides of the ramekins.}

  2. Heat the cream and xylitol in a saucepan over a medium heat and let it simmer until the xylitol is dissolved.

  3. Add the chocolate and coffee and let it sit for a few minutes until melted.

  4. Whisk until smooth and completely incorporated.

  5. Add the egg yolks and vanilla and whisk until smooth.

  6. Pour the mixture into the ramekins and bake for 25-30 minutes.

  7. The pots should still be jiggly in the middle when they come out of the oven.

  8. Allow to cool and place in the fridge to firm up and chill completely.

Any chocolate-lover will love these decadent little Low Carb Chocolate Pots for their chocolate fix.
I serve these often when we have friends over for dinner and they always love it, even though most of them are usually not following a low carb lifestyle.

In fact, my philosophy when entertaining, is that I serve all low carb foods – I never cater for ‘normal’ diets.

Anyways, I love that these are so easy to make! They’re delicious and can be quite dangerous – don’t say I didn’t warn you… But go on, make these ASAP!
