{Low Carb} Pizza with Parmesan & Portugese Sardines

Seriously, I don’t understand kids…

Does anyone?!

Just as I think I know what they like / don’t like, they hit me with a curve-ball.

As a rule, I don’t want to make separate food for the kids that are ‘kid-friendly’, I would rather have them eat whatever we eat and thus be less likely to develop fussy habits…
I believe that you have to expose children to more sophisticated and healthy food.
I get so irritated when kids are automatically given bland, starchy food…
I mean, just look at any kids’ menu nowadays.
{Anyways, that’s my opinion, and that’s the idea – but hey, it doesn’t always work like and often kids will choose the less healthy stuff!}

I often make dishes that is #kidapproved, meaning that it’s great for adults but have the kiddies’-stamp-of-approval too.

Like I said, I won’t normally make separate ‘food for the kids’, however…

I made these spinach-based pizzas with Parmesan cheese and Portugese sardines and I thought to myself, the kids are not going to like this, so let me just save myself the headache and make them something else.
{My go-to ‘kiddies’ dish is usually eggs-something, they LOVE eggs.}

So, I made a very simple, but delicious egg salad for the kids: chopped, boiled eggs with mayo, mustard and salt.

When Seb {my almost-4-year-old} saw the pizzas, he asked if he could have some of that ‘Hulk’ pizza…

Sure, I said…

Well, neither kids wanted egg salad and both of them polished off about 3 slices! Fish and all…

I was VERY impressed!

So, this recipe definitely gets a big, fat #kidapproved stamp of approval!

These were totally delicious, without being too ‘heavy’ and cheesy.
You could obviously use any other toppings too {although the combination of salty, oily fish and sharp cheese went really well with the spinach} or just slice the base into fingers for snacks.

Fantastic with a glass of crisp, dry, white wine! {For the adults πŸ˜‰ }
