Mexican Loaded Sweet Potato

This Mexican loaded sweet potato is such a quick, easy & cost-effective weeknight dinner, it’s ridiculous!

I never used to be much of a jacket-potato-lover, and so never really bothered with sweet potatoes either…

Until, you know, you exhaust your arsenal of quick & easy low carb dinners and you need something new.

Besides, the boys LOVE their sweet potato and it’s a great lower carb alternative to potatoes and healthy too!

You can spice-up this Mexican loaded sweet potato to your liking, either way, it’s fab!

Mexican Loaded Sweet Potato {Paleo, LCHF}

You will need:

2 sweet potatoes, cooked
2 avocados
1 batch of chili or hidden veg bolognese
2 handfuls of fresh coriander
4 tbs sour cream
4 tsp / slices of chili butter
Jalapeno slices

Take a hot sweet potato, halve it per person and dollop a tsp or slice of chili butter onto it.
Load each sweet potato serving with a helping {about 2 tablespoons} of chili or bolognese.
Top with half an avo, mashed and a tbs of sour cream.
Season and place a bunch of fresh coriander leaves on top, as well as some sliced jalapenos.

Serve and enjoy!

Sweet potatoes are high in dietary fibre and full of vitamins! Not only are they lower in carbs than potatoes, but they also contain way more vitamins and antioxidants.

They also contain great amounts of iron, magnesium and calcium – all essential minerals for enzyme, protein and carbohydrate metabolism.
Yip – true story!
