Smoked Trout & Avocado Breakfast Stacks

A breakfast of scrambled eggs can become a bit boring, so I like to switch it up over the weekends with a treat for the family.

These smoked trout & avocado breakfast stacks are quick and easy to make – my favourite combo πŸ˜‰ – and a welcome change to the usual cooked breakfast.

This will keep you going until late afternoon and is packed with healthy fats and nutrients.

I like to boil the eggs in advance – and make a few extra too – and simply dunk them in hot water for a few minutes just before serving, that way they’re just the right temperature.

This takes about the same time to prep as a bowl of cereal with milk – so wouldn’t you rather give your family these hearty smoked trout & avocado breakfast stacks???
And so pretty too – it really says ‘Spring’!
