Bacon-Wrapped Grilled Fish

We all know that bacon is totally delicious and you can wrap pretty much anything in it and have a winner..
So, have you ever tried bacon-wrapped fish?!

I tried it a while ago while watching the previous season of Masterchef SA and boy, oh, boy, was it to-die-for!!!

This version is super simple and uses only 3 main ingredients for the entire dish!

{Low Carb} Bacon Wrapped Fish square

You will need:

Fresh hake fillet, cut into thick strips {roughly 400 g}
250 g streaky bacon
1 cauliflower, steamed & mashed
1 tbs butter
1 tbs cream cheese
1 tbs mascarpone cheese
Salt
white pepper

This is so quick and easy, it’s ridiculous…

Simply wrap each piece of fish with a piece of bacon.

Place on a lined baking sheet and bake at 160C for 20 minutes, then place under the grill for another 10 minutes until the bacon is golden and crisp.

Serve with creamy cauli mash:
Mix the mashed cauliflower with the butter, cream cheese and mascarpone and season with salt & pepper.

The bacon keeps the fish beautifully succulent and also flavours it beautifully!

The kids LOVED it, it’s SO quick to make and it totally hits the spot.

I’d say it’s a great weeknight dinner – or you could even make smaller little nibbles as appetizers or snacks…
