Banting Flapjacks with Bacon & Triple Cream for Breakfast

Gooood Morning!!

My favourite breakfast used to be flapjacks or French toast with bacon, drenched in golden syrup… {back in the carb days…}

This is a banting-friendly version, with bacon and mascarpone {triple cream} cheese.

{Adapted from the recipe in The Real Meal Revolution}

You will need:

2/3 cup almond flour
1/3 cup coconut flour
1 and 1/3 cup ricotta cheese
3/4 cup milk {whole, full cream milk}
1 tsp baking powder
4 eggs, separated
pinch of salt
butter for frying
streaky bacon
mascarpone cheese

Fry the bacon first – in a bit of butter – and set it aside. Use the same pan for the flapjacks and don’t throw away the bacon fat.

To make the flapjacks, combine the flours, milk, ricotta, baking powder, egg yolks & salt and blend properly in a blender. Make sure everything gets blended in.

Whisk the egg whites to stiff peaks and fold it into the batter in 2 batches.

Use your bacon pan and set it on a medium heat. Add another dollop of butter if you need…
Drop spoonfuls of the batter into the hot pan – 3 or 4 per pan is good – and let it fry for a few minutes on each side. {The smaller the flapjacks, the easier they are to flip over!} Make sure they’re properly cooked in the middle…

Serve with bacon and a dollop of mascarpone cheese.

Right – so here’s the thing:

I’ve been trying out a lot of ‘banting-friendly’ / ‘low-carb’ recipes for old favourites, but let me tell you, I’d rather just stick to simple & tasty proper real food – pure banting.

These flapjacks are not bad and I suppose if you’re really craving an old favourite like this, well then give it a go, but it’s certainly not the same as its carby counterpart.

Anyways – play around and have fun – try new things and experiment!

    i just had these for brekkie. They were MAHVELOUS DAHLING! I used a blob of greek yogurt and berries instead of bacon as I’m vegetarian. But, they hit the spot. Thanks for posting your recipe.
