Berry Chocolate and Cheesecake LCHF Parfait

A mouthful indeed – but this Berry Chocolate and Cheesecake LCHF Parfait is worth every bite ;)

A light-as-a-feather chocolate roulade base, topped with ultra-rich and decadent chocolate mousse, cheesecake and a trio of berries. Who needs trifle?!

 

Servings: 8
Time: 1 hour + setting time
Difficulty: easy

You will need:

1 chocolate roulade with cream filling
1 batch chocolate mousse

For the ‘cheesecake’:

1.5 tub full fat cream cheese at room temp 1 tsp vanilla essence
2 tbsp. powdered xylitol

Whip the cream cheese until fluffy, then add the vanilla and xylitol. Mix well.

Assemble:

Cut 2cm thick slices of your roulade and place it in a glass – use a cookie cutter to get perfectly round slices.
Top with a spoonful of ‘cheesecake’, a spoonful of chocolate mousse and finish it off with a strawberry, some blueberries and a fresh cherry.

Add a sparkler for some festive cheer!
*You could also make this into a large dessert instead of individual glasses.

 

Ok, so this Berry Chocolate and Cheesecake LCHF Parfait is definitely a decadent calorie-bomb, but worth every calorie!

Plus, it’s LOW in carbs and sugar-free. Just make sure to keep your portions small, as these things do add up you know…
