What the heck is crackslaw?!
Oh, my dear friend, it is pure deliciousness!
I’ve often seen versions of it on Pinterest {I love Pinterest!} and to be honest, the name intrigued me…
I’ve seen a lot of recipes, especially desserts, that is named crack-something-or-other…
It’s usually something gluttonous and over-indulgent, not-pretty-food, just pure awesomeness.
Anyways, so I decided to try out this crackslaw business and let me tell you – it’s GOOD.
Not only is it really delicious, but it’s quick {and cheap} to make too!
I also love that it’s a one-bowl-eat-with-just-a-fork-dish…
My 4-year-old made it for dinner last night – ok, he helped me, but still, I’m confident I’ve got a little sous-chef to rely on.
And what’s more, the kids LOVE this dish! Perhaps because they helped to prepare it..? Or because they just really like cabbage and coleslaw..?!
#KidApproved
Basically, it’s fried mince with stir-fried coleslaw mix {cabbage, carrot & onion – no mayo obviously} and an Asian-style dressing.
It literally takes 15-20 minutes to prepare from start to finish.
This is definitely a regular item on my weekly meal plan – we have it at least once a week!
[recipe title=”Low Carb Crackslaw” servings=”4-6″ time=”15-20 mins” difficulty=”easy”]
You will need:
500 g beef mince
1/4 white cabbage, shredded
a handful red cabbage, shredded {optional – if you can find – I’ve been battling to find it lately}
1 or 2 carrots, thinly Julienned
1/2 red onion
2 tbsp. sesame oil
2 tbsp. coconut oil
2-3 tbsp. soy sauce {you can use a suitable substitute if you can find, or fish sauce, although it won’t be the same. Use your own judgement, it depends on how strict you are with things like soy sauce…}
1 tsp xylitol {castor}
thumb-sized fresh ginger, finely chopped
3 tbsp. white wine vinegar / regular white vinegar
1 tsp hot sauce of your choice
Fry the mince in coconut oil – season with salt – until golden and slightly crispy.
Remove from the pot and set aside.
Using the same pot, add the sesame oil and stir-fry the veggies.
Mix the dressing ingredients: soy sauce, xylitol, vinegar, hot sauce and ginger.
Add the cooked mince back into the pot with the stir-fried veggies, pour over the dressing, stir, dish up and enjoy!

If you are very strict low carb, then you could leave out the carrots – but it’s a great nutritious dish for kids as is.
Also with regards to the soy sauce – well, use your discretion… Personally, I don’t see the harm in a little bit of soy sauce once in a while or every other week. We don’t use it all that much and it does provide a great flavour.
Thanks to whoever invented crackslaw – I love it!
Hope you like it too. X
