Oh, my dear friend, it is pure deliciousness!
I’ve often seen versions of it on Pinterest {I love Pinterest!} and to be honest, the name intrigued me…

I’ve seen a lot of recipes, especially desserts, that is named crack-something-or-other…
It’s usually something gluttonous and over-indulgent, not-pretty-food, just pure awesomeness.

Anyways, so I decided to try out this crackslaw business and let me tell you – it’s GOOD.
Not only is it really delicious, but it’s quick {and cheap} to make too!
I also love that it’s a one-bowl-eat-with-just-a-fork-dish…

My 4-year-old made it for dinner last night – ok, he helped me, but still, I’m confident I’ve got a little sous-chef to rely on.
And what’s more, the kids LOVE this dish! Perhaps because they helped to prepare it..? Or because they just really like cabbage and coleslaw..?!

Basically, it’s fried mince with stir-fried coleslaw mix {cabbage, carrot & onion – no mayo obviously} and an Asian-style dressing.
It literally takes 15-20 minutes to prepare from start to finish.

This is definitely a regular item on my weekly meal plan – we have it at least once a week!

If you are very strict low carb, then you could leave out the carrots – but it’s a great nutritious dish for kids as is.
Also with regards to the soy sauce – well, use your discretion… Personally, I don’t see the harm in a little bit of soy sauce once in a while or every other week. We don’t use it all that much and it does provide a great flavour.
