What’s a dinner party or get-together with old friends without something sweet and decadent to end off the night?
Call me old-fashioned, but a dinner party or get-together must end with a good dessert!
Seeing as I’m a little eggnog-obsessed and it’s the silly season, I made this delicious {and boozy} low carb eggnog cheesecake:

You will need:
1/2 a batch of pecan rusks
2 tbsp. melted butter
600 g plain, full fat cream cheese {I used Kiri cream cheese in 200 g tubs}, at room temp
1 cup cream
1 tsp vanilla
2 tbsp. powdered xylitol
3 eggs, gently beaten
1/2 cup brandy
1 tsp cinnamon
1 tsp mixed spice
1/4 tsp nutmeg
Blitz the rusks into crumbs and mix with the melted butter for the base.
Press the crumb mixture onto the base of a lined springform pan and bake at 180C for 10 minutes.
Beat the cream cheese, spices and xylitol together. {You will need either a stand mixer or an electric hand mixer.}
Add the cream, brandy and vanilla and beat again until smooth.
Add the eggs and mix well, without over-beating.
Pour the cheesecake mixture onto the base and bake at 170C for 35 minutes.
It should have a slight jiggle to it when you remove it from the oven – that means it will have a perfectly creamy centre once it’s cooled.
Allow the cheesecake to cool in the pan.
Gently slide a knife along the inside of the pan to release the cake and remove the pan.
Chill in the fridge for an hour or 2 before serving.

This cheesecake really doesn’t need anything else – it’s perfect in its simplicity.
Just serve with good coffee and you’ve hit a homerun!
I love how this crust came out – perfectly crunchy and cookie-like.
This will definitely be my go-to crust recipe.
