These tasty little fritters can be enjoyed as breakfast / lunch or dinner!
I serve it with double cream plain yoghurt (previously Greek yoghurt… While we’re visiting the States though, the creamiest yoghurt I could find was the Cabot’s 10% fat plain yoghurt).
As you can see, I didn’t even get a chance to take a proper photo, without tiny little hands creeping closer..!
You will need:
1 large sweet potato, peeled, diced and cooked
1/2 large marrow {or around 3 small baby marrows / zucchini}, grated
1 cup kale, finely shredded
1 egg
Salt
Pinch of ground chili powder
Butter
Mash the sweet potato.
Add the grated marrows / zucchini and the kale.
Mix thoroughly and season.
Add the egg and mix.
Heat the butter in a large pan and dollop spoonfuls of the mixture into the pan. {The smaller the fritters, the easier they are to turn}
Fry until golden on both sides – about 2-3 minutes a side…
Serve with a generous dollop of plain double cream yoghurt.
