Super-restorative & Nourishing Indian-style Omelette

Can I just say: Oh M Geeeeee! {Oh My goodness}

I went back to gym today, after a nice long break of almost 2 months… And then I almost died.

Can fitness just disappear like that? What about muscle memory?! Seems like I have a bit of muscle amnesia… {Even though I went running a lot these past 2 months!}

Needless to say, I was about to faint of hunger when I got home {didn’t have time to eat before class, and just had a coffee}, so I whipped up this delicious, comforting, nourishing and restorative late breakfast / lunch {brunch!}:

You will need:

2 tsp coconut oil
1 small onion, finely chopped
1 red birds’ eye chili, finely chopped
1 tsp curry powder
3 eggs
A splash of full cream milk
Pinch of salt
1/2 a cup of mozzarella cheese, grated
A handful of fresh coriander, roughly chopped

Start by heating 1 tsp of coconut oil in a pan.
Add the onion and saute over a medium heat, until the onions are soft.
Add the chili and the curry powder and fry for a bit.

In a small bowl, whisk together the eggs, milk and salt – set it aside.

Add another tsp of coconut oil to the pan and now add the egg mix.

Scramble it slightly, sprinkle the cheese on top, then the coriander and let it cook for a minute or so with a lid on.

When the eggs are just about set, gather it all together into an omelette shape with a silicone spatula and serve.
{Don’t let the eggs overcook, it can even still be a bit shiny, rather than overcooked – there’s nothing worse.}

This is such a treat when you’re feeling famished and depleted and will keep you going for a while! It’s filled with good fats and protein.

Oh, and if you’re feeling skeptical about the whole curried omelette thing – give it a try, you’ll be AMAZED!
The first time I had an omelette like this, was in India and the idea was a bit strange, but I seriously fell in love with it! The combination of chili, coriander and egg is a winner.
Team it up with a nice cuppa tea and you’re all set!
