Lamb chops loaded with red pepper pesto, creamy goats’ cheese and refreshing cucumber…
Don’t you just love food stacks like this?!
It is honestly my favourite way to serve and present a dish.
These lamb chops are taken to the next level with a rich red pepper pesto, creamy goats’ cheese, cucumber ribbons and shredded mint – who says a braai can’t be gourmet?

You will need:
12 lamb chops
freshly squeezed lemon juice
salt
white pepper
red pepper pesto – click for recipe
plain, soft goats’ cheese
cucumber, thinly ribboned
fresh mint, finely shredded
Prep the lamb chops by squeezing over the lemon juice and seasoning with salt & pepper.
Allow it to marinate for an hour or so before cooking.
Braai the lamb chops on warm coals – not too hot – for a few minutes on each side, until they are golden brown and the fatty bits start to crisp up.
Serve stacked with a generous dollop of pesto, 2-3 slices of goats’ cheese, a handful of cucumber ribbons and topped with fresh mint shreds.

The stacking thing works best on adults – it is not so well-received by the little ones…
You see, they like to see all the elements on their plate – and The. Food. Must. Not. Touch.
Seriously – if the food touches, it’s not edible.
