Chicken with Creamy Blue Cheese & Broccoli

So, what’s for dinner tonight?

We’re having chicken with creamy blue cheese and broccoli – and a gem squash.
{Ok, so we’re not reaaally having this for dinner, I lied, this was last night’s dinner… Freshly blogged for you to enjoy tonight ;) }

Don’t you just love broccoli as an adult? I used to hate it as a child – who didn’t?!

I think it’s because it was always cooked to within an inch of its poor little life – all murky green and limp… Not a pretty picture…
I’m making it my mission to teach my kids to enjoy their veggies and eat healthy foods, and I must say it’s not that difficult seeing as we all eat healthy and there’s just no other option for them.
Well, the choice is usually between having what’s on their plates or not having anything for dinner, and my boys are always hungry so they eat what’s on their plates {most of the time}.

Ok, so I wasn’t too sure whether they would like the blue cheese and I don’t believe in making separate ‘kiddie food’ for the kids, so it was a bit of a gamble, but….success – they both loved it! :)

Here’s what you’ll need:

3 large chicken breasts

Peppadew spice 

1 large head of broccoli

1 cup of cream {more or less…}

A decent chunk of blue cheese

Butter

A splash of dry white wine {and a glass for yourself, of course!}

This is so super-easy it’s actually ridiculous!

Cut the chicken into strips and season with Peppadew spice {I use the cilantro one}.

Heat some butter or olive oil {I prefer to use butter, especially to help get the chicken a nice golden colour and to add to the flavour} in a pan and when it’s hot, add your chicken strips.

Stir-fry until all the chicken is cooked {but not dry – cook until it is JUST cooked} and golden and then add the splash of wine, just to de-glaze the pan.

Reduce the heat to quite low and add the cream, blue cheese and broccoli {break them into little florets} and just let it cook for a few minutes until the broccoli is cooked but still crunchy. Also, make sure you stir in the broccoli, coating it a bit with the sauce.

Enjoy it as is, or with a gem squash {seems a bit random, but was good!} or even some cauli mash.
