Hello and happy Monday!
I see this everywhere – but I’ll just say it again – how on earth is it March already?!
At this rate I’ll be 50 in a year’s time – good grief.
So – Monday – probably the most loathed day ever… I would hate to be it!
To be honest, I quite like Mondays {except for the very early start}, and here’s why:
- It’s a fresh start to the week
- The kids go back to school after a nice and busy weekend {I do love and enjoy my kids dearly, but come Monday, I’m happy to wave goodbye for a few hours ;) }
- It’s laundry day and everything gets renewed and refreshed
- I get to plan my week and make my beloved lists {blush}
- Even though I’m usually super-busy at home on a Monday, the solitude is quite welcome
This all sounds quite tranquil, but let me let you in on a little secret, Mondays are mayhem and I usually never get through all I need to do…
{So much for those lists…}
Come late afternoon and I’m scrambling around, playing with the kids and trying to concoct something decent for supper!
That’s why I try and keep things simple on a Monday – it’s either some oven roasted chicken or a quiche of some sorts. {The fridge is also normally a bit depleted after the weekend and with my long to-do list, I never get to the shops on Mondays, so dinner is kept simple.}
Right, enough waffing about Mondays – here’s my favourite restorative omelette in a quiche form, perfect for a Monday supper:

You will need:
1/4 onion, chopped
2 tsp curry powder
1 can of tuna in brine
1 1/2 cups cream
1 cup milk
1 cup grated Mozzarella cheese
1 cup roughly chopped coriander {cilantro}
1 tsp salt
Sour cream
1 tbs coconut oil
6 eggs
Saute the onion in coconut oil until soft, then add the curry powder and cook for a few minutes.
In a medium bowl, whisk together the eggs, cream, milk, tuna, cheese, coriander and salt.
Pour this mixture into a smallish, greased baking dish and add some dollops of sour cream.
Bake at 180C for 40 minutes.

Totally easy and so quick to prepare – it just hits the spot!
