Italian Meatball Soup

Rich, hearty meatballs meet soul-warming soup and voila, you have Italian Meatball Soup!

These meatballs are rich, tasty and comforting, yet light, almost like a soothing bowl of chicken soup and is perfect for treating cold-weather-woes.

Servings: 6-8
You will need:

500 g pork mince
500 g beef mince
1 onion, grated
a handful mixed fresh herbs {basil, coriander, parsley}, finely chopped
1 tbsp. psyllium husk
2 tsp salt
1 tsp smoked paprika
3 garlic cloves, crushed
1 egg
3 large, ripe tomatoes
1 red pepper
1 orange / yellow pepper

Start by mixing the minced meat, onion, herbs, psyllium husk, salt, paprika, garlic and egg.

Mix it well and roll into medium-sized balls.

Brown the meatballs in a large pot in coconut oil {neutral} or olive oil.

Place the tomatoes and peppers in a blender and blitz until smooth.

Once the meatballs are browned on all sides, add the pureed tomato and peppers to the pot, place the lid on and bake at 160C for 1 hour.

Serve 3 meatballs per person, along with a ladle of the sauce / soup.

Garnish with freshly shredded sweet basil.

 

You can keep any leftovers in the fridge and use it with breakfast later in the week.

These meatballs are FAB with scrambled eggs!

If you’re only cooking for a few people, like I am at the moment while hubby’s away on business, you can easily stretch this dish into 3 different dishes:

  1. Original Italian Meatball Soup
  2. Breakfast Bowls with Scrambled Eggs
  3. Meatball ‘Nests’ – a meatball or 2 inside half a gem squash – or serve with zucchini noodles

I love simple, yet big flavours and this Italian Meatball Soup delivers on that!
It’s rich, comforting and not too heavy. It has a ‘light’, ‘clear’ feel to it and is loaded with good stuff!

I had my eldest son help me with this and honestly saved a lot of time and effort – he rolled all the meatballs and loved every second of it.

You can even make this one ahead of time and just reheat.
