Mediterranean Chicken Zoodles

A bowl full of tender, golden chicken strips in a roasted tomato sauce with zucchini noodles – or, Mediterranean Chicken Zoodles!

I’m trying to be less wasteful this year, cut down on our grocery spend and get the kids to eat more veggies.

Zoodles – or zucchini noodles is a great way to get the kids to eat zucchini. Anything in noodle-form, I’m telling you…
The roast tomato sauce is also one of my kids’ favourites and is packed with veggies, all blended into a delicious sauce bursting with flavour.

As for cutting down on the grocery spend and being less wasteful; this dish consists of 3 parts:
Zucchini noodles – I bought a large 1 kg pack of zucchini and used some of it in the tomato sauce, some for the zoodles and what’s left over I will use in another zoodle dish this week.
Tomato sauce – I used a 1 kg pack of Rosa / cocktail tomatoes along with zucchini, onions and peppers. Half the sauce went into this dish, the other half I’ll use in a lamb dish later this week.
Chicken – the chicken breasts I used for this dish was a 1/4 of a large pack of 16 I bought earlier this month {and froze}. I cut and brined 8 breasts and only used 4; the other 4 will be used for another dish this week.

Not only did I use the ingredients very economically, I also saved myself heaps of time for later meal prepping.
{And yes, I planned this entire week’s menu already, allowing me to save time, effort and money.}

You will need:

1 batch of kid-approved tomato sauce {I made a double batch to save time later in the week}
7 medium zucchini, made into noodles
butter
4 chicken breasts, cut into strips and marinated in salmuera marinade for a few hours

Stir-fry the zoodles in butter until just soft and golden – set aside.

Remove the chicken strips from the marinade and pat dry.

Using the same pot as you did for the zoodles {saves time on washing-up…}, add more butter and fry the chicken strips until golden and cooked through.

Add the tomato sauce and heat through.

Serve the saucy Mediterranean chicken on a bed of zoodles.

Marinating the chicken for a few hours will make it really juicy and tender – there’s nothing worse than dry chicken!

The kids really loved this and both had second helpings.

{My youngest – almost 3-year-old – does everything his older brother of 4 1/2 does and if Seb doesn’t eat his veggies, neither will Faf… My little trick when it comes to getting Seb – the eldest – to eat his veggies, is to tell him that all kids who play cricket / gymnastics {insert sport / activity} eat their greens.} ;)
