Moroccan-style Roast Chicken

Aren’t we lucky to have all this rain at the moment?! Love it!

When the weather is rainy, I want soul-food, I want hearty comfort food… Give me some roast chicken and I’m a happy chappy!

Here’s my recipe for Moroccan-style Roast Chicken with a smoked paprika rub, along with some sweet potato wedges and greens:

You will need:

1 whole chicken
Smoked paprika
Peppadew spice
Fine salt
Olive oil
3 medium sweet potatoes
Green beans
Mangetout

Start by pre-heating your oven to 180C.

Rub the chicken with olive oil – just enough to rub into the chicken – on all sides.
Sprinkle the entire chicken with a thin layer of salt and rub it in.
Sprinkle the entire chicken with smoked paprika and rub it in.
Sprinkle the entire chicken with Peppadew spice and rub it in.
Tie the legs with some string.

Cut the sweet potatoes into wedges and place them in a roasting dish.
Place the whole chicken on top of the sweet potatoes in the roasting dish.
{The lovely smoked paprika chicken juices will cook and flavour the sweet potatoes!}

Roast for an hour and a half.

Blanch some green beans and mangetout to serve with the chicken.
