Spinach & Broccoli {Low Carb} Meaty Bites

Here’s a recipe for spinach and broccoli meaty bites – done in two different ways, because it’s always great if you can whip up a big batch of something and create more than one meal! {Especially on a weekend ;)}

1 batch of spinach & broccoli mince mixture = 35 meatballs + 6 quiche squares
OR 50 meatballs
OR 18 quiche squares

You will need:

1 cup cooked broccoli
1l cooked spinach {it should fill up a blender to the 1l mark, unsquashed}
1 kg boerewors or plain minced meat {seasoned to your liking}
2 eggs
3 tbs finely grated Parmesan

Start by blending the broccoli and the spinach to an almost puree. You’ll end up with about a cup of blended spinach and a cup of broccoli.

To make the meatballs, simply mix all the above ingredients together {remove the boerewors from its casing} and roll into bite-sized balls.
Place the meatballs in a large baking dish and bake at 160C for 45 minutes until golden brown.

For the quiche squares: {makes 6}

1 onion, thinly sliced
1 tbs balsamic vinegar
1 tbs butter

{Heat the butter in a pan, add the onions and let them soften. Add balsamic and let it slowly caramelise. Set aside.}

Leftover spinach & broccoli mince mixture {or a third of the batch}
1 tbs butter
1 tsp peppadew spice

{Heat the butter in a pan (just use the same pan and save yourself some washing up!) and fry the mince mixture, along with the peppadew spice, until most of the moisture has gone. Set aside.}

6 eggs
100g mozzarella cheese, grated
2 cups cream
Pinch of salt and white pepper

{Whisk together the eggs, cream, salt & pepper.
In a smallish baking dish, layer as follows:
Caramelised onions at the bottom
Cooked mince mixture
Cheese
Egg mix on top
Bake for 45 minutes at 180C}

Both versions of these bites are great with a simple tomato salad:
Small Roma tomatoes {grape tomatoes}, halved
Mixed rocket leaves & baby butter lettuce
A good sprinkle of salt
A generous glug of olive oil

When I made the quiche squares, my husband announced that he’s not that hungry and only wants a little helping of quiche and more salad…
