Thai-Style Green Salad that’s Bursting with Flavour

I’m a little obsessed with Thai flavours at the moment…

I just love that exotic burst of fresh flavour!

This simple Thai-style green salad is really quick to make and big on flavour:

You will need:

1/4 cabbage, finely shredded
1 head of romaine lettuce, finely shredded
200 g green beans, blanched
2 spring onions, finely chopped
a handful of fresh coriander, roughly cut
1/2 stalk of fresh lemongrass
3 cloves garlic
1 red chili
1 tbs honey
1 tbs sesame oil
4 tbs red wine vinegar
3 tbs olive oil
salt

Toss all the greens together.

For the dressing, grind the lemongrass, garlic and chili to a rough paste using a mortar & pestle.
Add the honey, sesame oil, vinegar & olive oil and mix well.

I like to use an empty jam jar to shake up all the ingredients for the dressing, that way it gets mixed properly.

Season with salt and pour onto the salad.

You can make this salad a day in advance – it gives the flavours more time to mingle.

    Made the Thai-style green salad tonight, wow it was so delicious. Had it with leftover trout lip smacking. Definitely doing it again.
