Kid-Approved Tomato Sauce {Sugar-Free, LCHF, Paleo}

Kids love tomato sauce, but I don’t love all the sugar and crap stuff in store-bought sauces…

My kid-approved tomato sauce is crammed with hidden veggies {I’m all about the ‘hidden’ veggies lately}, plus it’s completely sugar-free, it doesn’t even have any sweeteners.
Just good old, sun-ripened veggies.
Plus it’s VERY easy to make…

Kid-Approved Tomato Sauce {Sugar-Free, LCHF, Paleo & Crammed with Veggies!}

This is a great base for a bolognese sauce, pizza topping, chili, dipping sauce, you-name-it…

What I love about it, is the robust veggie flavour; but I don’t think the kids noticed that. Thankfully, else they might not eat it! 😉

Kid-Approved Tomato Sauce

You will need:

2 cups ripe Rosa tomatoes
2 red peppers {or 1 red, 1 yellow}
3 medium zucchini
1/2 red onion
2 tbs coconut oil

Roughly cut the peppers, onion and zucchini.
Place them in a roasting dish along with the tomatoes, drizzle with the coconut oil and season with salt.

Roast in the oven for 30 minutes, stirring twice.

Let it cool and then puree everything together, using a stick blender.

Store it in an air-tight container in the fridge and use as needed.

You can also add some garlic & chilies to add more flavour…

My kids really enjoy it with sausages and cauli mash and tonight we’ll use it on a cauli pizza base… I’m sure it’s going to be great!
