A delicious strawberry coulis can be used for many things, and it doesn’t have to be filled with sugar.
Strawberries are already naturally sweet and a great low carb fruit.
My boys absolutely LOVE strawberries – I probably keep a small strawberry farm going… Hehe! I should probably just plant my own…
Here’s a quick and super easy recipe for sugar-free strawberry coulis that can be stored in the fridge for up to 2 weeks:

You will need:
400 g fresh, ripe strawberries
1 cup water
1 tbs xylitol
5 g gelatin powder + 1 tbs cold water
Cut the stems off the strawberries and halve.
Place the strawberries, water & xylitol in a small saucepan and bring to the boil.
Let it simmer until the strawberries start to disintegrate and reduce a bit.
Blitz with a stick blender.
Dissolve the gelatin powder in cold water and once it’s solid, add it into the warm strawberry sauce.
Stir until it’s dissolved, let it cool and store in a jar.
I’ve been adding this to my chocolate breakfast granola – it’s like dessert for breakfast!
