Festive Zucchini, Walnut & Blue Cheese Salad

A festive Zucchini, Walnut & Blue Cheese Salad that’ll liven up any Festive gathering.

A salad needs to accompany and complement your meat dish – or, even be able to stand on its own…
Salads should never be an after-thought. That said, sometimes a really simple salad is all a main needs, but remember, never let it be just a boring side.

This Festive Salad will go perfectly with a beautiful roast chicken or turkey.


Festive Zucchini, Walnut & Blue Cheese Salad

I could easily live off salads like this; bursting with flavour and combining interesting ingredients – what a pleasure to eat! {If I do say so myself ;) }

Crunchy, crisp Romaine lettuce with toasted nuts and charred zucchini, a festive sprinkle of fresh cherries and piquant blue cheese.
All dressed up in a tangy vinaigrette. SO good.

You will need:

3 medium zucchini, thinly sliced & dry-grilled
1 head of Romaine / cos lettuce
1 cup walnuts, toasted & chopped
80 g fresh cherries, stones removed & cut in half
50 g blue cheese
3 tbsp. olive oil
juice of 1 lemon
juice of 1/2 an orange / 1 small orange
1 tbsp. salmuera dressing

Grill the zucchini slices in a cast iron griddle pan – no oil – until slightly charred on both sides.

Arrange the lettuce leaves in a salad bowl or serving platter with the zucchini slices.
Add the nuts, cherries and blue cheese.
Place the olive oil, lemon juice, orange juice & salmuera in a small jar and shake vigorously to mix well.
Pour the dressing over the salad.
