Here’s a delicious cauli recipe specially for the kiddos or a yummy mid-afternoon bite:
It’s always nice to have something like this on hand for hungry tummies…
You can swap out the peas for something more legit and low carb – I added peas specifically because my boys asked for it – such as spinach or grated zucchini.
{I don’t mind giving my kids peas every now and then, as I feel that kids can have slightly more starchy veggies from time to time. My kids also LOVE bananas, so they have those often.}

A low carb 'bread' made of cauliflower and cheese, with peas & ham.
Swap out the peas & ham for any other veggies and/or cooked meat.
Perfect as 'muffins' or loaves and great for picnics, lunch boxes, snacks, etc.

- 2 heads Cauliflower steamed
- 2 cups Mozzarella Cheese grated
- 1 cup Ham chopped
- 3/4 cup Fresh Peas
- 1 tsp Himalayan Salt ground
- 1 pinch White Pepper
- 3 whole Eggs
- 2 tbs Psyllium Husk
- You will need to puree the cooked cauliflower using a blender or food processor. Once pureed, squeeze out the excess water by wringing it in a muslin cloth or a clean tea towel.
- Add all the rest of the ingredients to the cauliflower and mix well.
- Divide the mixture between 12 muffin cups {it's best to use a silicone muffin pan} OR 6 muffin cups and a loaf pan OR 2 loaf pans.
- Bake at 180C for 65-70 minutes.
Here are a few more flavour combinations you can try – just swap out the peas & ham:
1 cup grated zucchini + 1 cup cooked bacon
1 cup grated zucchini + 1/2 cup crumbled feta + handful of fresh shredded mint
1 cup cooked, cubed aubergines + 1 cup cooked, shredded lamb
1 cup finely chopped onion + 1 cup cooked bacon
1 cup chopped mushrooms + 1 cup cooked, cubed chicken
