Firstly, let me get some admin out of the way…
You may have noticed some technical gremlins wreaking havoc these past few days, and perhaps you’re no longer even receiving my blog posts via e-mail.
Well, I’ve made a few ‘backstage’ changes to the blog, switching hosts, etc. and hopefully all will be smooth sailing from here.

I’ve made this delicious slow-cooked lamb to share with you – and well, let me just say it’s a winner!
- 6 Lamb chops {Any cut is fine}
- 3 Red chilies {Coarsely chopped}
- 1 Green chili {Coarsely chopped}
- 1/2 tsp Salt
- 1/2 tsp Smokey paprika
- 1 Lemon {Juice from 1 lemon}
- 1 cup Chicken stock
- 2 Bay leaves
- 1 tbs Red Peppadew spice
- 10 Baby aubergines {Halved}
- 2 handfuls Green beans {Whole, trimmed}
- Layer all the ingredients in your slow-cooker / crock pot:
- Lamb chops, sprinkled with salt, paprika and the lemon juice.
- Next, place the vegetables on top and season with the Peppadew spice {or any mixed spice containing red pepper, garlic, salt & onion}.
- Add the stock and place the bay leaves on top.
- Set the slow-cooker on low and leave to cook overnight or 10 hours.
- Once cooked, remove all the meat from the bones and shred apart - return to the cooker and let it mix well with the sauce. Serve the shredded lamb along with the veggies.

I just love my slow-cooker and how it can transform a few ingredients into a delicious, comforting meal overnight / while I’m doing other things!
