It’s lunchtime already on Comrades-day 2015 and I wouldn’t mind one of these post-race…

Low Carb Grain-free Breakfast Burger

What a race it’s been – such great results for SA!

Well done to everyone who ran {and are possibly still at it), including the brave 13 from our running club.
{And no, I certainly did not run, I watched most of the race however, from the cushy comfort of my couch!}

It’s not something that I really plan on doing, it’s just a teensy bit too far for me, but it sure is inspirational and quite emotional too.
To see how hard these athletes have worked and to see them persevere for 90 km – THAT is inspiring.
{The furthest I’ve ever run is 24 km on trail – and that was tough, so I can’t even imagine how tough 90 km would be…}

I might just devour a few of these yummy burgers if I ran today!

Low Carb Grain-free Burgers

Here is the basic burger recipe – dress it up any way you like – for breakfast, lunch or dinner:
{Just give the bun a skip, okay?}

  • Servings: 12
  • Difficulty: easy

You will need:

1 kg beef or venison mince
A handful of fresh parsley and sweet basil, finely chopped
1 green finger chili, finely chopped
1 onion, grated
1 tsp crushed garlic
1 tsp green Peppadew spice
1 tsp salt
1 egg

Mix everything together really well – use your hands – and form into patties.
Don’t make them too big, as they tend to them crumble. {Palm-sized is best}

Cook them on a solid, smooth cast iron pan {like a flat-bottomed wok or a grill plate} over coals.

Cook them for about 5 minutes per side – until they’re a dark, golden brown.
Don’t overcook – they should still be juicy!

Serve them up with some crispy bacon, Dijon mayo, avocado, cheese, egg, tomato – whatever you like!
{Wrap them in lettuce if you want to eat it like a burger…}

One batch of these burgers will certainly be enough for dinner AND breakfast the following day:

You can even enjoy these if you haven’t been running… πŸ˜‰

Give them a try – they’re so easy to make and tastes a thousand times better than shop-bought burgers!
{Plus, they don’t have any cereal or rusks in them to bind it all together…}

    Definitely going to try this today. Would they be good to freeze cooked ? Or maybe prepare and freeze uncooked ?

      Hi Dianne,
      I think it’d be better if you freeze them uncooked – shape and wrap in clingfilm.
      That way they should hold their shape better once you defrost and cook them.
      Let me know how they turn out!
