Meatilicious: Low Carb Beef & Venison Dishes

Never Tried Bone Marrow? Where Have You Been?!

I have to admit, I never used to like it, or more accurately, the thought of eating bone marrow grossed me out… That was when I was still young and a bit silly…

Now – LOVE it!

I recently discovered a fab new butcher and got some really nice, large beef marrow bones from them. It’s so ridiculously cheap, it’s not even funny. I think we paid something like R30/kg.

It is also SUPER-nutritious! Prized by all animals and of course, our primal ancestors, this super-food is a very calorie-dense, fatty substance that is packed with vitamins and minerals and is like a brain-boosting-serum.

If that bit of info didn’t convince you, well, I guess the proof is in the pudding…

Creamy, sweet, salty and oh-so-delicate, it really IS an underrated delicacy.

Simply drizzle with olive oil and sprinkle with course pink salt.
Roast for 30 minutes at 230C,until the marrow is soft and cooked.

Enjoy with a spoon, along with some creamy cauli mash and balsamic roasted tomatoes:

For the cauli mash:

1 large head of cauliflower, broken into florets and steamed until tender

Salt & white pepper to taste

Splash of milk

Splash of cream

Blitz with a stick blender until creamy and smooth.

For the tomatoes:

Small, Roma tomatoes or cherry tomatoes, whole

3 large garlic cloves, peeled

Olive oil

Balsamic vinegar

Half an onion, cut into 4

Freshly ground pink salt

Place the tomatoes in a small roasting dish and stick the onions and whole garlic cloves in-between.
Drizzle with olive oil and a tiny splash of balsamic.
Grind salt over the top and grill for 30 minutes in the oven.
You will need to give it a stir halfway through, so everything roasts evenly.

So easy to make and it’s such a treat! Will definitely make it again very soon, especially on a special occasion.
