Chocolate mousse is such a classic dessert and one of those that can easily be adapted to be low carb without totally destroying the essence of it.
I’ve tried many chocolate mousse versions and I have to say – this one is The Ultimate LCHF Chocolate Mousse!
It’s rich, super silky, decadent and just the right amount of sweet…
It really is dark choc perfection.
The Ultimate Low Carb Chocolate Mousse – makes 4 servings
You will need:
85 g dark chocolate {70%}
85 g butter
30 ml strong brewed coffee
5 egg yolks
2 egg whites
30 g xylitol
1/2 tbsp. water
pinch of salt
1/2 tsp. vanilla
1/2 cup cream
1 tbsp. cocoa powder
Over a pot of simmering water, melt the butter, chocolate and coffee in a heat-proof bowl.
Set aside and allow to cool slightly.
Place the egg yolks, xylitol and water in a mixing bowl onto the pot of simmering water.
Using an electric mixer, whisk until the mixture becomes pale, thick and creamy.
This takes about 5 minutes.
Remove from the ‘boiler’ and continue to whisk until it returns to room temperature and continues to thicken. Another 5-10 minutes.
Once it’s cooled, fold in the chocolate mixture.
In a stand mixer, whip the egg whites, salt & vanilla until stiff.
Fold the egg whites into the chocolate mixture.
Using the same stand mixer {no need for rinsing}, whip the cream and cocoa together until thick.
Fold it into the chocolate mousse.
Make sure everything is mixed well, pour it into a serving dish or individual bowls and let it chill in the fridge for 2-3 hours at least.
You can make this a day or 2 in advance.

This is my ultimate favourite dessert at the moment – better than any store-bought mousse I’ve ever had, even pre-LCHF days…
And the best part is that nobody will even know that it’s low carb – so no grilling about your ‘diet’ or lifestyle that you’ve chosen – just a nice dessert, plain and simple.
It’s basically like a fat bomb and you could most definitely enjoy this on an egg fast {even though I’m not a fan of those}.
