‘Breakfast Fritatta!’ in the same voice as Agent Lucy from Despicable Me 2 when she announces ‘Lipstick Tazer!!!’
Or perhaps I’ve just watched the ‘minions movie’ a few times too many..?!
And the only reason I’ve watched it a gazillion times, is because my kids absolutely LOVE it – seriously, they will watch it back-to-back 3 times in a row…
Not that that has anything to do with this ‘Breakfast Fritatta!!’… I just imagined it being said in that voice.
You will need:
100g mushrooms, sliced
200g streaky bacon, sliced
1 onion, chopped
Butter for frying
Garlic & chili butter {about a tbs of butter, mixed with finely chopped chili and garlic}
6 eggs
1/2 a cup of cream
Sour cream {optional – for serving}
Fresh coriander to garnish
Start by sauteing the onions in some butter, using a heavy-based pan over medium heat.
Add the bacon and fry until almost crispy.
Add the mushrooms.
Once those are all cooked, add the chili & garlic butter and let it melt into everything.
Reduce the heat to low.
Gently whisk the eggs and cream together in a separate bowl, then pour it over the mixture in the pan.
Cover the pan and let it cook for about 10 minutes, just until the egg is cooked and no longer runny.
Loosen the fritatta with a spatula, then take a large plate and place it over the pan.
Holding the pan and plate tightly together, quickly flip it over so you get the fritatta inverted onto the plate.
Voila – all done!
Now just add a sprig of fresh coriander and enjoy! {Will also be really delicious with a dollop of sour cream.}
