Grilled Aubergine and Feta Rolls {LCHF Holiday Food}

One of my favourite types of food – or eating rather – is small plates of different nibbles. I love the freshness and burst of flavour from these Grilled Aubergine and Feta Rolls.

They make a delicious addition to a feast of small plates and is even perfect as a light sundowner meal.

 

Pair these Grilled Aubergine and Feta Rolls with some marinated olives, cold sliced chicken and other bits for the perfect LCHF holiday platter.

Grilled Aubergine & Feta Roll-Ups

My husband and I differ quite a bit when it comes to eating preferences.

Like I said, I absolutely love a selection of different nibbles, sampling away while sipping some crisp bubbly. For me, eating has never been simply to nourish, but rather an enjoyment of food, along with the social company that goes with it.

Hubby prefers to have his own plate of food… Look, he’s come around a lot, but if asked, that’s how he prefers it.

I also really love food that’s bursting with flavour while still being quite simple.

This dish ticks all those boxes – plus it’s really easy to make too!
Plus – hubby LOVES it – a winner all-round!

You will need:
2 large aubergines, thinly sliced
100 g feta cheese
1/2-2 chillies, finely chopped {depending on how hot you prefer}
a handful of fresh mint, finely chopped
2 garlic cloves, finely chopped
juice of 1/2 a lemon
+- 2 tbsp. olive oil
greens to serve

Dry-grill the aubergine slices until soft and well- charred.

Mash the feta and add the chillies, mint and garlic.
Add the lemon juice and olive oil and mix well.

Roll a teaspoon of the feta mixture into each slice of grilled aubergine.
Serve with mixed greens and a generous drizzle of olive oil.

This makes for a really refreshing side for grilled lamb chops too or any lamb dish really…
