Turn it into a Fried Camembert Salad and you have a winner!

This is such a simple dish, packed with flavour and surprise, and I guess that’s why I love it so much.

I first had this at one of our monthly book club dinners.
Each person got a whole fried camembert and could then build their own salad from a salad bar.

Here’s my version of this ultra decadent salad, paired with crisp, fresh, zesty ingredients.

Time: 20 mins
Difficulty: easy

You will need:
4 camembert cheeses
baby herbs & lettuce – assorted {baby spinach, basil, rocket, butter lettuce}
fresh mint
4 radishes, very thinly sliced
1/2 red onion, very thinly sliced
pomegranate seeds
olive oil
squeeze of lemon juice
almond flour
1 egg
3-4 tbsp. coconut oil {neutral odour}

Arrange the greens on 4 plates, add torn mint leaves, radishes and red onion to each.
Scatter some pomegranate rubies onto each plate.

Dress the greens with lemon juice and olive oil.

To fry the camembert, make sure it’s a room temp.

Whisk the egg in a small bowl Place a cup or so of almond flour in another little bowl.
Add a few tbsp. of coconut oil to a pan – enough to reach halfway up each camembert.

Dip each whole camembert in egg and then in almond flour.
Make sure the oil is hot enough but not too hot!
Fry the cheeses until golden on one side, then gently turn over and cook until the other side is also golden.

Serve on the bed of greens.

I don’t know about you, but I love simple, elegant meals like this.
Especially during Summer and especially during the lazy holiday season…
