Happy Friday! So, what’s on the menu this weekend?
I must confess… I love to cook and experiment with new recipes, but often on weekends I just don’t feel like spending any time in the kitchen.
The less fuss, the better!
So here’s a great recipe that is really quick to prepare and includes everything on one plate – salad, veggies, meat – check. {This makes a fab brunch or lunch dish}
You will need:
A small punnet of pattipans
3 medium courgettes
1 small head of broccoli
1/2 an onion, roughly chopped
250g boerewors or any other sausage, cut into bite-sized bits {be sure that there are no fillers / grains in there..!} {I use venison boerewors, specially made by the butcher}
Mixed salad greens
1 ripe avocado
2 tbs olive oil and more
2 tsp wholegrain mustard
1 tbs red wine vinaigrette
Parmesan or another similar hard cheese
In a small roasting dish, pack the onions, pattipans, broccoli and courgettes and drizzle generously with olive oil.
Pack the boerewors bites in-between and grill in the oven for about 30 minutes, rotating everything at least once within that time.
{You don’t really need any seasoning here, as the boerewors is already seasoned and will give a lovely taste to the veggies.
Once those are all roasted and ready, let it cool to room temp and place it on a bed of mixed salad greens. Add your diced avo.
Mix the mustard, olive oil and vinaigrette and drizzle over the salad.
Finish it off with shavings of Parmesan cheese.
Now that you’ve saved yourself some time in the kitchen, whilst still providing your family / friends with a fabulous {and healthy!} meal, you deserve a nice big glass of wine! ;)
