A breakfast of scrambled eggs can become a bit boring, so I like to switch it up over the weekends with a treat for the family.
These smoked trout & avocado breakfast stacks are quick and easy to make – my favourite combo ;) – and a welcome change to the usual cooked breakfast.
This will keep you going until late afternoon and is packed with healthy fats and nutrients.
I like to boil the eggs in advance – and make a few extra too – and simply dunk them in hot water for a few minutes just before serving, that way they’re just the right temperature.

You will need:
4 shaved fillet strips / ribbons of smoked trout – you can also use smoked salmon
2 tbs full fat cream cheese
half a handful of fresh dill
a squeeze of lemon juice
1 avocado, sliced
2-3 medium-boiled eggs
salt & pepper
Mix the cream cheese, dill and lemon juice together and set aside.
If you have a moulding ring, you can use that to layer your stack neatly, or simply layer it free-style as follows:
Layer 2 ribbons of trout at the bottom,
followed by half of the dill cream cheese.
Layer half a sliced avocado on top and repeat the process.
Top with 1 egg and add another 1 or 2 eggs on the side.
Season with salt & pepper.
This takes about the same time to prep as a bowl of cereal with milk – so wouldn’t you rather give your family these hearty smoked trout & avocado breakfast stacks???
And so pretty too – it really says ‘Spring’!
