I’ve been all kinds of busy these past few days – it’s funny how productive one can be when your partner is away…

I didn’t say I was focused – no, I’d say I was more like that ADHD squirrel from some animated movie!

A bit of DIY here and there, some bits of spring cleaning, a  bit of me-time, girly movies, etc…

I don’t do a lot of cooking while hubby’s away, I prefer to throw together simple and easy meals.
I usually eat a lot more veggies too, probably to compensate for all the wine hot chocolate sleepless nights.

Have you ever tried making your own cheese from buttermilk or Amasi?

Well, I’ve seen it a lot and heard about it and people saying it’s just wonderful, but have never tried it {apart from when we were in India, I actually used to make it quite often using curd} because I can just buy it…

Then I made some the other day – SUPER easy – and it is SO delicious! You’ll never eat regular cream cheese again!
It has a much ‘lighter’ texture than cream cheese, less ‘rubbery’ and just more delicate.

It’s delicious with some toasted pine nuts and a drizzle of olive oil – in a salad, with a seed cracker, just as is, however you like…
Just do it.

You will need:

1 litre full cream Amasi or buttermilk
Olive oil
Handful of pine nuts, toasted in a dry pan
Mixed yellow and red mini tomatoes
4 whole cloves of garlic
1 small head of broccoli
Wild rocket

To make the cheese, simply strain the Amasi in a cheesecloth, suspended over a bowl. Leave it to strain overnight in the fridge – you could also make this quite a few days in advance.

Place the tomatoes and garlic in a roasting dish and drizzle generously with olive oil.

Roast under the grill in the oven for 30 minutes, then add the broccoli florets and grill for another 10-15 minutes, depending on how charred you prefer it.

Serve on a bed of wild rocket leaves and place a huge chunk of your homemade cheese on top.
Sprinkle with toasted pine nuts and some more olive oil.
