Breakfast in a flash: Bacon Bowls filled with Egg & Spinach

I love breakfast; I love bacon; I love the fact that I can eat eggs & bacon just about every day and not get bored with it!

I grew up with cereal / porridge for breakfast – bacon & eggs were for special weekend treats, because, you know, it’s unhealthy…
{Thank goodness we now know better!!}

Anyhoo, so here’s another nifty little way to serve up eggs & bacon:

I used The Bacon Bowl tool-thingie, but you could just use a regular muffin tin.

Get your bacon baskets into the oven first, then get onto the rest.

As you know, I’m not a big fan of washing up, so just go ahead and use the same pan for everything!

You will need {serves 2 people = 4 baskets}:

1 onion, chopped
2-3 cups of baby spinach
6 eggs
Splash of milk or cream
A pinch of salt
250g bacon {if you’re using back back, just cut each piece into 2 to form the baskets – you will need 2 pieces per basket}
1 ripe avocado, sliced
1 tbs coconut oil

Start by heating the coconut oil in a pan and saute the onions until soft.
Cut the remaining bacon into pieces and add it to the pan.
Once the bacon is cooked, add the spinach.
Cook until the spinach is wilted and set aside in a separate bowl {keep the bacon fat in the pan}.

Mix the eggs, milk & salt and scramble on a high heat in the pan with the bacon fat.

Once your baskets are ready, fill them with scrambled eggs and the spinach mix.

Serve with half an avocado.

{Great breakfast to keep you going on a busy day.}
