Guacamole Salad with Tomatoes & Sweet Basil

How to jazz up a simple tomato & avo salad:

Tomatoes and avocados {when in season} are two of the things that are always in my fridge – you can literally have a salad with just these ingredients.
They also transform any dish, especially a good steak!

Add some sweet basil and I’m sold!

You will need:

Roma tomatoes, halved
Green beans, blanched
Sweet basil
1 avocado, mashed with a fork
Salt & pepper
Olive oil
Baby butter lettuce
Freshly squeezed lemon juice

Start by cutting the tomatoes in half and sprinkling them liberally with fine salt. {The tomatoes won’t taste overly salty – this is the key to the best marinated tomatoes!}
Drizzle with olive oil and let the tomatoes marinate for a while {an hour so is fine}.

Blanch some green beans and set aside.

Mash the avocado, season with salt & pepper and add a good squeeze of lemon juice.

Place a handful {or more} of baby lettuce in a pretty serving bowl.
Arrange the beans on either side.
Place the guacamole {mashed avocado} in the centre and surround it with your beautifully marinated tomatoes.
Place a few sprigs of sweet basil in-between and scatter a few torn leaves all over.

You really don’t need any salad dressing – the guacamole and the tomato ‘juices’ create a rich and flavourful all-natural dressing.

Team it up with a juicy steak or just enjoy it as is!

The kids also love this type of salad, because they can see all the different elements, plus they enjoy dipping the beans into the guacamole.
