Easy Marinated Olives

You can’t go wrong with olives, they’re naturally low in carbs and make a great snack. These easy marinated olives make a great addition to any cheese board.

These are honestly so easy to make and takes a few minutes to whip up. I love giving these as hostess gifts too and everyone always raves about them πŸ™‚

So, here’s what you need:

1kg Kalamata olives in brine

1 lemon

3 cloves of garlic

2 red chillies – adjust to personal preference

glug of olive oil

about a tbsp. of salmuera marinade (optional, it just adds an extra bit of flavour)

Drain the brine from the olives and empty the olives out into a large bowl for easy mixing.

Add in the zest from the whole lemon, plus the juice (mind the pips!) and a glug of olive oil.

Finely chop the chillies and garlic and add that in too.

If you’re using salmuera, add that in and give the olives a good stir.

You can transfer the olives plus marinade back into the jar and keep in the fridge until needed.

Loaded with flavours of garlic, chilli and a subtle hint of lemon, these easy marinated olives make a great snack.
