I’ve given up on low carb breads or any form of immitation burger buns, etc.
It. Just. Doesn’t. Taste. The. Same. End of story.
Instead, I’ve decided I rather like a bun-less burger!
Sometimes I use grilled aubergine as a ‘base’ – really yum and I’ll post a version of these soon – but this time I opted for lettuce and it was great!
It also looked prettier.
These are great for low-key stay-in date-nights – you know, when the kids have gone to bed and you can enjoy this with a glass of wine and watch your fave movie…
Or better yet – Friday Food!
Light a fire outside, watch the sun set and enjoy a glass of wine…
{You see how each scenario features that glass of wine… ;)}
Whatever the occasion, these are yum.
I used ‘game’ or ‘venison’, but that mostly refers to the meat from a deer.
This was wild pig.
You could use normal pork mince, mixed with beef or any mince really – just make sure to season accordingly.
[recipe title=”Game Sliders with Jalapeno Poppers” servings=”8-10″ difficulty=”moderate”]
You will need:
1.5 kg minced meat {I used a combination of partially smoked wild pig mince with pork cheese griller meat}
1/2 an onion, finely chopped
1 1/2 tbs Peppadew Spice
2 eggs
Mix everything together very well and shape your burgers.
They should not be too big – these are sliders – you will get about 20 burgers.
Cook on the barbecue / Weber / Big Green Egg / cast iron griddle until it’s cooked through and slightly charred on the outside.
I made this raw tomato relish to accompany the burgers. The slightly tangy acidity goes really well with the smokiness of the burgers!
2 cups cherry tomatoes {mine came straight from the garden!}
2 cloves of garlic
Blend this quickly until it’s just really finely chopped, then add 3 tbs olive oil and 2 tsp fine salt.
Mix well and keep chilled.
Serve the burgers on a large piece of lettuce, topped with a slice or 2 of Mozzarella cheese and a couple of jalapeno poppers and the tomato relish on the side.

And – for those guys {let’s face it – all of you!} that need a little reminder:

February 18, 2015 at 1:30 pmAhh this looks delicious but I don’t eat pork and trying to stay away from red meat too :( Anything with chicken and veg style ingredients would be great.
