Happy Father’s Day to all the Dads out there – may your kids always look up to you and may there never be a shortage of bacon! ;)
So, I’m not really a fan of ‘substitute’ foods, like trying to recreate some high carb ‘staples’…
You’re usually just left disappointed.
However, I’ve come across this fab {and totally easy} recipe for 2-minute breakfast mug ‘bread’ and it’s quite delicious every now and then.
Hubby and I both LOVE French toast drenched in syrup and a generous side of bacon…
So I decided to try out a low carb version, using this ‘bread’ and it was totally fab! The perfect treat for a Father’s Day {or other special occasion} brunch.

You will need:
For the ‘bread’ – this will yield 5 ramekins of bread, which you’d cut in half = 10 slices}:
400 ml almond flour
100 ml melted butter {or half butter, half bacon fat}
1 tsp salt
4 eggs
Mix all the bread ingredients together and divide between 5 ramekins.
Microwave on high for 4 minutes.
Let them cool and then turn out of the ramekins and slice in half.
For the cinnamon sauce:
1 tbs melted butter
1 tsp xylitol
1/2 tsp cinnamon
Mix all the ingredients together and microwave until it’s all melted.
For the French toast egg mix:
2 eggs, whisked
1/2 tsp cinnamon
pinch of nutmeg
1/2 cup of cream
Mix all the ingredients together and dip the bread slices in the egg mix.
Fry in coconut oil until golden brown on both sides.
Serve with the cinnamon sauce and crispy bacon.

the ‘bread’ recipe is a specific microwave ‘mug’ recipe, I’ve never tried it in the oven.
You could give it a bash at 180C for about 10 minutes?
